HUNGARIAN CHILLED CHERRY SOUP


Summer is that time when I want some fresh,colorful tasty but simple food in my menu. On this hunt of mine I came across a very delicious recipe- Hungarian chilled cherry soup, though a soup it can be served after meal as dessert. If you ask me I will tell you that this soup is now on my summer time  dessert top list. So if you want to taste this Hungarian chilled cherry soup which can be served as dessert then follow the steps below and I am sure it will help you to chill.

INGREDIENTS:





Fresh cherry        3 cups
Sugar 1/2 cup or to taste
Corn starch 1 tea spoon
Lemon juice 1 table spoon
Lemon zest 1 tea spoon (grated)
Sour cream 1/2 cup
Salt a pinch
Fresh mint leaves for garnish


PROCEDURE:
For this recipe sour cherry is the best but if you are using sweet cherry then you can use alittle less sugar. Use 2 cup of ‘Hungarian’ sour and 1 cup of sweet ‘Lapin’.First pit cherries. Put a pan on flame add cherry and 4 cups of water. Bring to boil and cook until the cherries are tender. Make a smooth puree of this boiled cherry in your food processor. Then again put it in a pan.You can add few pitted sour cherries it gives a nice look.Then add sugar and let it boil. Then in a small bowl add cornstarch with little water and then add it to the soup. Let it cook for few minutes.Then add the lemon zest and lemon juice. Mix well and your cherry soup is done but befor putting off the flame taste it if it is too sour add more sugar and if it is too sweet add more lemon juice to get a balanced sweet and sour taste, this  make Hungarian chilled cherry soup  perfect. Serve chilled with dullops of sour cream and mint leaves.

SPICY FRUITS KEBAB


Summer is great time for juicy fruits. I love fruits because it is healthy and always give me a feel good attitude.  I try to find out different ways to make those regular fruit more delicious. On this journey I find  this spicy grilled fruit recipe. I hope you will like it as they are warm, juicy, soft and flavor full.

INGREDIENTS:


Firm ripe peaches  chunks   6
Firm Apple chunks
(both green and red) 6 each
Firm guava chunks 6
Firm pineapple chunks 6
Boiled baby potatoes 2
Hung yoghurt 1/2 cup
Ginger garlic paste ½ tea spoon
Cinnamon powder 2 pinch
Cardamom powder 2 pinch
Red chilly powder 1/8 tea spoon
Sugar 1 tea spoon
Salt according to taste
Mint leaves finely chopped
Melted butter 1 tea spoon
Bamboo skewer 2
PROCEDURE:
First soak the bamboo skewers in cold water for 30 minutes or more.
Now take a big bowl . First put the yoghurt, then ginger garlic paste, cinnamon & cardamom powder, salt , sugar, red chilly powder. Mix them well. Now put all the fruits chunks and potatoes in it. Mix well. Thread assorted pieces of fruits placing peaches at first and topped with boiled potatoes. Then grill kebabs turning once, until lightly browned and slightly softened about 5 minutes. Brush butter in each side while you grill. Your delicious fruits kebab is ready to serve.Sprinkle mint leaves when you serve it in your favorite platter. You will feel the spices in the outer layer whereas the inner part of the fruits are juicy and cruncy, A bit different yet exotic taste , I am sure you will love it.

BRAZILIAN FISH STEW- Moqueca de Peixe


I hope you all have enjoyed funfilled Paddy’s day. This weekend is the time to recap those moments. Those who will dine out they are lucky but for those who have to cook for them let me share with you a delicious stew recipe from Brazil. This tropical fish stew is speciality of Bahia, a state in Northern Brazil locally popular as Moqueca de Peixe. This is a garlic flavor stew enriched with coconut milk. Authentic recipe is bit difficult so I make a easy version of it, I hope you will like it.

INGREDIENTS:
Boneless fish fillets 2 pounds ( sea bass or hailbut )
Srimp 1/2 pound (peeled and deveined)
Tomatoes ripe 5 coarsely chopped, 1 sliced
Onion 1 chopped,2 cut into rings
Garlic 1 ½ table spoon
Ground red pepper ½ tea spoon
Vegetable oil /
Oilive oil 3 table spoon
Cliantro 1/4 cup chopped
Fresh lime juice of 1/2 lime
Bell pepper
( red and green) 1 each
(stemmed , seeded and sliced)
Fish stock 2 1/2 cup
Light coconut milk 1 cup
Salt and pepper according to taste

PROCEDURE:
Cut the fish fillet into bite size pieces.Take a skillet heat oil then add the chopped garlic, onion, stir for a minute. Add chopped tomoto, red pepper powder. Stir for few minutes then put the flame off. Then put all the mixture in the grinder with salt , lemon juice . Make a smooth paste. Marinate the fish fillet and srimp with this mixture and keep aside for one hour. After an hour pour the fish in a heavy sauce pan, add bell pepper,sliced onion and sliced tomatoes and fish stock stir well . Let it boil , cook until the fish is done then add the cliantro.Season with salt and pepper. Then add the coconut milk . Cook for few more minutes. Serve hot with rice. It is delicious and can be enjoyed year round.

DELICIOUS IRISH COFFEE


Again it’s time to celebrate in Irish style. It’s St. Patrick’s Day and I thought sharing with you a cup of Irish coffee. It’s delicious, elegant and great way to make someone feel Happy St. Patrick’s Day. I know many of you have tried Irish Coffee as it is long been favorite in Irish pubs and it is found in all happening food corners of the world. So if you don’t have any health hazard and want to enjoy a lovely Irish evening then you should go for a cup or glass of Irish coffee.

INGREDIENTS:



Brewed  coffee    3/4 cup
Irish whisky 1 table spoon
Brown sugar 2 teaspoon or according to taste
Whipped cream as you wish
Grated chocolate for garnish


PROCEDURE:
The first step to make Irish coffee is prewarmed the coffee mug or glass. If you are using a glass then put a tea spoon in it., pour some warm water. As the glass warm up empty the glass then pour one tablespoon of Irish whiskey ( choose some good quality one of the world famous brand of Irish whisky which I came across is Jameson, let me know which one is your favorite?) then add the coffee and sugar. Mix well. Serve immediately topped with whipped cream (sweetened if desired). For St. Patrick Day you can make a chocolate shamrock .It should be served without spoon . Don’t stir the coffee sip your drink through the whipped cream.

CARROT CORIANDER SOUP


This is a very healthy and soul soothing soup. If you just want to relax this weekend and want some thing fresh yet delicious then this is one soup you can rely on. For me this soup is for lazy Sunday’s when I don’t feel to cook yet want to satisfy my taste bud with something delicious. I think you will like this carrot coriander soup.
INGREDIENTS:
Carrot paste        1 cup
Dried Bay leaves 1
Onion 1 chopped
Spring onion 1/2 cup chopped
Butter /diet butter 1 table spoon
Water 4 cup
Fresh Coriander handful chopped
Sugar 2 pinch
Salt and pepper according to taste

PROCEDURE:

Take a pan and place it on flame. Add a table spoon of butter in it. As the butter starts to melt add chopped onion and spring onion. Stir it for 2 minutes then add a cup of carrot paste stir well. Then add water, you can add more or less as per your wish. Then adjust the seasoning adding salt and pepper. Let it boil. Cook for 5 minutes. After that put off the flame and strain the soup with a strainer. Then again put the soup mixture on flame let it warm up and now it’s time to add the freshly chopped coriander leaves. Mix well. Your delicious carrot coriander soup is ready to serve.

DELICIOUS PITA BREAD SALAD


As I promised that I will share with you my favorite pita bread salad recipe with you which go well with grilled tuna. So I am here with it this crispy, crunchy, yummy salad. You will get touch of Mediterranean flavor in this salad. So don’t waste time to discover the unique taste of this wonderful salad.
INGREDIENTS:


Pita bread        3 large 
Olive oil 2 1/2 table spoon
Lemon juice 4 table spoon
Garlic 1 teaspoon (grated)
Cucumber 1 large diced
Cherry tomato 10 halved
Boiled green peas 1/4 cup
Bell pepper 1 diced
Red onion 1 sliced
Raisin 10 to 12
Fresh mint leaves few chopped
Lettuce leaves 4
Dried oregano 1/4 teaspoon
Dried basil 1/8 teaspoon
Feta cheese 1/4 cup grated (optional)
Salt and pepper according to taste


PROCEDURE:
Cut each pita bread into small triangles. Arrange the pita wedges in single layer on a baking sheet. Preheat the oven at 350 degree then bake the bread for 5 to 6 minutes or until toasted. Let it cool down then transfer it in a airtight container. If it sounds too difficult then go for instant baked pita chips. Now take cucumber, tomatoes, onion, bell pepper, green peas, raisin, grated garlic, olive oil, fresh mint leaves mix well in big bowl. You can cover and chill it for half an hour or serve immediately. Before serving add salt and pepper dried oregano and basil. Then add the pita bread toast. Toss with  lettuce and sprinkle cheese above it.
Serve with proud this healthy salad will definitely give a fresh feeling and all will praise your culinary talent.

DELICIOUS GRILLED TUNA


This was a busy week for me, I have to finish lots of my pending work. Now I am free and want to enjoy my weekend to its fullest.
For last few days I haven’t cooked one of my favorite tuna fish. So I thought why not enjoy this weekend nights with delicious grilled tuna. I am having it with pita bread salad. I will share that pita bread salad recipe in my coming post but for today enjoy this grilled tuna recipe. I am sure you will love to have it.

INGREDIENTS:

Tuna steaks           4
Lemon juice 1 whole
Anchovy paste 2 tea spoon
Tomato paste 2 teaspoon
Red chili flakes 1/2 teaspoon
Garlic paste 2 teaspoon
Ginger paste 1 tea spoon
Finely chopped fresh
mint leaves handful
Olive oil 6 to 7 table spoon
Salt and pepper according to taste


PROCEDURE:
Take bowl and mix all the above ingredients in it except the tuna fish steaks. Cover the mixture for 1 to 2 minutes so that all the flavors get well blended. Now marinate the tuna fish with this prepared spice mixture for 30 minutes to 1 hour. Grill on preheated grill. Baste while cooking and turn once. Cook about 4 to 5 minutes each side. Serve it with your favorite salad. Though I will have it with pita bread salad but some more simple serving suggestion are giving sundried tomato, rings of onions and sautéed boiled vegetable as accompaniment.

DELICIOUS COCONUT QUENCHER


In midst of work and day to day worries and hurries I forget that the special spring festival has already knocked the door. Last Sunday is a special day for all the Indian’s all over the world as we celebrate the festival of color and love HOLI. This is a crazy festival where people come together to share the color of love with each other and share free hugs, dance and sing and color each other. This is the most vibrant spring festival of India. There is lot of drinks and sweet served while people enjoy playing with colors. In my house it started from early morning and last till afternoon we all have a great time with our loving family and friends. My Mom prepared a great thirst quencher for us with young coconut water. It is too delicious and healthy. I hope as summer is on the way this coconut thirst quencher can be a great choice for you too.
INGREDIENTS:
Water of young coconut      4
Honey 4 table spoon
Lemon juice 2 table spoon
Small cardamom powder 2 to 3 pinch
Grated coconut 1table spoon
Ice cube few

PROCEDURE:
Take a high ball glass( if you can get fresh young coconut then it is too good otherwise use the packaged water) then pour the water in it. Add a table spoon of honey,1/2 table spoon of lemon juice and a pinch of cardamom powder mix well. Sprinkle grated coconut. Now serve chilled with ice cube.
