Delicious Vegetable Chicken Fritters


Today we all Indians are celebrating another year of freedom.. On this special occasion I want to wish all Indians everywhere in the world A Very Happy Independence Day 2010.
Few friends of mine are coming to my place today to celebrate this day in our own special way, I know they are happy go lucky type and will love a cup of delicious tea or coffee with something crispy and peppy. So today for a while I keep aside my health freak soul and indulging in to something that is a once in a while treat but too tasty and I hope you all will love it. This are deep fried Vegetable Chicken Fritters.

Ingredients:
Egg           3
Chicken small cube 1/2 cup
Carrot small cube 1 cup
Fresh beans sliced 1 cup
Onion slice 1/2 cup
Capsicum small cube 1/4 cup
Green chilly 2 chopped (optional)
Ginger garlic paste 1 teaspoon
Fruit salt / baking soda 2 to 3 pinch
Flour 1 1/2 cup
Sugar 1/2 teaspoon
Cayenne powder 1/2 teaspoon (optional)
Salt and pepper according to taste
Chicken stock 1 cup
Soya bean oil as needed for deep fry

Procedure:
First beat 3 egg in a bowl whisk well. Then scrambled this eggs. Keep aside. Now boil the chicken cube with a peiceof onion, ginger and two cloves of garlic. Keep aside the chicken cube and the chicken stock separately. Now take a teaspoon of oil in pan and slightly fry the chicken cube with salt and pepper. Take a big bowl put flour in it then all the vegetables listed in the ingredients one by one, then add sliced onion and ginger garlic paste ,chopped green chili, cayenne powder, fruit salt( this is mainly used as rising agent) if you don’t have it use baking soda, sugar , salt and pepper. Mix well then add the scrambled egg and the fried chicken cube , then slowly add the chicken stock the consistency of the batter should be thick. Now in a frying pan heat oil sufficient to deep fry this fritters. Take a big spoon and drop spoon full of batter into the oil. Fry till golden brown. Now drain the excess oil on a paper towel and serve hot with your favorite dip or hot and sour tomato ketchup and simple salad. Your delicious Vegetable chicken fritters are ready to cherish with friends and family.

* This vegetable chicken fritters are bit heavy so it is suitable for those who are completely healthy . Keep it in mind before having it.

Delicious Mint Julep


Today let me share with you delicious Mint Julep recipe. For those who don’t know about it let me share some interesting fact behind this drink. Mint julep is a cocktail associated with the cuisine of Southern United States. Since 1938 Mint Julep has been the official and most popular drink of the Kentucky Derby. Those who are from Kentucky Derby know that if horses and grand sport events are the prime attraction of Kentucky Derby then Mint Julep is its calling card. A chilled refreshing cocktail for warm days. Now I slightly deviate from the original recipe and make this cocktail a delicious mocktail . Usually in Mint Julep they use bourbon whiskey but I blend few fruit juices to cut short the alcohol intake and keep the Mint julep super healthy.

Ingredients:
Orange juice  1 cup
Pineapple juice 1 cup
Lemon juice 1/8 cup
Apple juice 1/4 cup
Mint leaves fresh 10 to 12
Crushed ice 1 cup

Procedure:
Take a large pitcher and mix apple juice , orange juice, pineapple juice, lemon juice in it. Keep aside. After that take 5 to 6 fresh mint leaves and crush gently with a spoon. Now put the crushed mint leaves in a chilled julep mug and then add in the crushed ice to the mug(1/2 full) and pour the mixed fruit juices from the pitcher. Don’t stir the mixture immediately, keep for few minute until the mug frost evenly. Stir gently(hold the cup at the rim while making to avoid fingerprints on the frosted cup or use this opportunity to write something on the glass for your dear one’s .) and garnish with fresh mint leaves with  a lemon or a orange wedge to add a special look. Your delicious Mint Julep is ready to be served. Let me know how you love the non-alcoholic version of Mint Julep.

Delicious Carrot Salad


Today I am in a mood to cook something simple yet healthy . What could be a better choice than my favorite carrot; it gives lovely color to my platter and I feel contended. This delicious carrot salad have a slight Korean touch which I hope you will like. Have it and tell me that you liked it or not!

Ingredients:
Carrot  1 lb coarsely grated
Red pepper flakes ½ teaspoon
Canola oil 2 table spoon
Garlic 1 teaspoon finely chopped
Lemon juice 1 table spoon
Roasted almond flakes hand full
Salt and pepper to taste
Fresh Cilantro few

Procedure:

Take the grated carrot in bowl. Heat the canola oil add chopped garlic and red pepper flakes. Now pour this dressing on the carrot. Sprinkle salt and pepper. Mix well. Cover and refrigerate it for an hour or two so that flavors can muddle. Before serving add lemon juice and roasted almond flakes and your delicious carrot salad is ready. Garnish with fresh green leaves of cilantro.

Delicious Strawberry Dessert


A friend of mine invited us for a treat and makes this lovely colorful delicious strawberry dessert for us. She told that her hubby made this strawberry dessert on their first date and she was clean bold at the taste, when he proposed, the poor girl don’t even get a chance to think (hehehe) and the result was after six month courtship they got married. That love story sound too simple but after I tasted this strawberry dessert, I know that behind this easy peasy recipe there is a clever guy who know how to impress his lady love! If you got the hint then go for it this weekend and who knows …………… LOL!

Ingredients:
Frozen strawberry 2 cups
Castor sugar 4 heaping spoon
Greek yogurt 1 cup
Crushed chocolate cookies 1 cup


Procedure:
First put strawberry in a blender and crush it then put sugar and make a coarse paste. In a glass first put the strawberry layer then the yogurt layer then the crushed cookie layer. Repeat it in the same manner. This dessert glass has its own beauty but if you want to give it a special look then garnish it with a fresh slice of strawberry. Yes you are done to mesmerize your beloved!

Delicious Chicken Empanadas


Those of you have visited Buenos Aires I think you all have tatsed Empanadas. A delicious pastry stuffed with meat, olives, ham, cheese, spinach, corn and even apples.I am sharing a very simple chicken empanadas recipe with you today hope you will like it.

INGREDIENTS:


Flour   3 cups (little more for kneading)
Salt 1 teaspoon
Cold water 1/2 cup
Egg 1
Egg white 1
Vinegar 1 teaspoon
Shortening 3 table spoon

For stuffing
Cooked chicken finely diced 1/ 2 cup
Mexican blend grated cheese 1/2 cup
Garlic clove 1 minced
Onion 1 finely chopped
Ground cumin 1/2 teaspoon
Raisin 1 table spoon
Salt and pepper to taste

PROCEDURE:

Every empanadas recipe starts with the dough. To make the dough first take a bowl beat egg, egg white, water and vinegar together. Keep aside. Now in a separate bowl mix flour and salt. Cut the shortening into flour and mix with a pastry blender. Make a well in the flour and pour the liquid from the first bowl into it. Mix this wet and dry ingredients with a fork until it is stiff. turn the dough in a lightly floured surface and then knead it well until it is smooth. Wrap the whole dough in a plastic and refrigerator it for at least an hour but not more than 24 hour.
In the meantime mix all the ingredients that are for your stuffing.
Lightly flour the surface where you will roll out the dough.Place the dough and then roll the dough into 1/8 inch thick layer. Cut this into circles with a 3 inch cookie cutter. Clean the outer circle and place a spoon full of the stuffing mixture in circle.Now very carefully fold the dough with the stuffing into a semicircle and crimp the edges with a fork.If the edges won’t stick together you can dip the fork in water before crimping or use an egg wash to rub along the inside edge of the dough.The most easy one is use a empananda maker. Now you can fry this empanands in  vegetable oil at 360 degrees for 1 to 2 minutes per side. They should be lightly golden. But I prefer that you placed the empanadas on a greased pan and take it to oven and cook it in moderate heat ( at about 375 degree Fahrenheit for 12 to 15 minutes) till this empanadas are crispy and slightly golden. Serve them on a plate with chimichurri sauce ( a mixture of parsley, peppers, onion, oregano, tomato, garlic, laurel, oil, vinegar, and red wine) and that’s it. Bon Appetite!

HEALTHY RICE SALAD


When creative mind work in your favor you are the boss and no one can stop creating delicious dishes out of nothing. I blend my leftover rice with fresh herbs and veggies to make a delicious healthy recipe- rice salad. Believe me it is awesome!

INGREDIENTS:


Long grain cooked basmati rice  1 cup
Egg 2
Boiled potato 1 cubed
Fried/roasted pine nuts hand full
Cucumber 1 diced
Tomato 1 cubed
Onion 1 chopped
Green chilly 1 finely chopped (optional)
Dried Basil and oregano 2 pinch each
Salt and pepper to taste

For Dressings
Olive oil 1 table spoon
Lemon juice 2 teaspoon
Mustard powder 1 teaspoon
Sugar 1/4 teaspoon or to taste
Salt and pepper to taste

For Garnish
Baby Arugula leaves


PROCEDURE:
If you are in hurry then  boiled the eggs chop and add to the rice salad otherwise take two eggs in a bowl add salt, pepper, basil and oregano whisk well. Then steam the whole mixture. Let your steamed egg cool for some time. After that cut this steamed eggs into cubes. Keep aside. For dressing take a small bowl and mix all the dressing ingredients and your dressing is ready.
Take the cooked rice in a bowl, add cucumber, tomato, boiled potato, steamed egg cubes, chopped oinion, and green chilly. Then drizzle the dressing over it. Gently mix the whole mixture. In your serving dish arrange the baby arugula leaves then place the rice salad over it. Top the rice salad with fried pine nuts.If you are looking for healthy recipes then this rice salad is one which will give you a guilt free meal.

GRILLED FISH KEBABS


Grilled recipes are favorite in weekends and mostly when I have to host a lawn party. These are simple, delicious and quick to make. If you are arranging one such party this week or any coming week then you may try this grilled fish kebabs I am sure your guest will love this.

INGREDIENTS:



Fish fillets     250grams
Onion 3 chopped
Garlic paste 1 table spoon
Ginger paste 1 teaspoon
Cayenne powder 1/2 teaspoon
Cardamom powder 2pinch
Cinnamon powder 2 pinch
Clarified butter 2 teaspoon
Greek/hung yogurt 100 gram
Salt and pepper to taste

PROCEDURE:

Cut the fillet in squares. In a bowl take hung yogurt and with it mix, ginger garlic paste, cayenne, cinnamon, cardamom powder, salt and pepper. Mix well. Now marinate the fish fillets in this mixture for at least an hour. Meanwhile fry the onion in a skillet till golden brown and crispy, drain the excess oil and keep aside. Now put the marinated fish into skewers and grill them in a tandoor or charcoal griller for 5 minutes each side or till done. Brush with clarified butter while you grill. If you don’t have a charcoal griller then don’t worry, grill it in your micro grill  but to give grilled fish kebabs a charcoal effect- take a piece of charcoal and heat it in an open flame, put it in a metal bowl. Place the kebabs in a plate put the hot charcoal bowl in middle and now pour a spoon of clarified butter in it. Fumes will come out. Cover the whole plate with a metal lid and give it a five minutes stand by. You will get yummy charcoal flavor kebabs.(* But those who can’t manage, and don't have any idea how to heat the charcoal please don’t try it.) Now arrange grilled fish kebabs on a serving plate and top them with crispy fried onions and lemon wedges. I think this week end you will rock your lawn party.
