Begedil ( Malaysian Potato Cutlet)


Begedil is a very popular Malay appetizer. Potato cutlet or potato patties are known as Begedil in Malaysia. It is very easy to make quick dish and those who are new to Malaysian cuisine then this dish is great to start with. With potatoes you can add green peas which are rich in iron and vitamin C, which helps to maintain our immune system, and carrots which provide a lot of nutrition to our body. This is indeed a great party food and you can enjoy with a tall glass of chilled mocktail. I am sure you will love this quick easy and delicious Malaysian appetizer.


Ingredients:

Big potatoes 3( peeled washed and cut into circles)
Spring onion 1 bunch finely chopped
Shallots 1 cup fried
Green peas ½ cup
Carrot ½ finely shredded
Turmeric powder 1tsp
Cilantro handful finely chopped
White pepper powder ½ tsp
Eggs 1 to 2 (beaten)
Oil for deep frying
Salt and pepper to taste

Chilly garlic soy sauce
Sweet Soy sauce 4tbsp
Chilly sauce 2tsp
Fried garlic paste 1/2 tsp tsp

Procedure:

Traditional recipe calls for deep fry the potato slices and drains oil then mash them in a dry bowl. But I just boiled them on salted water and mashed it . If you have no problem with oil and want to enjoy the real Malaysian taste go for the fried one otherwise take my route. I promise in this way too you will get a very delicious appetizer. One after another add all the other ingredients and mix well. Check the seasoning and shape them in a medium sized ball then press down lightly to make patties shape. Set aside. Now heat enough oil in a deep fryer. Coat each begedil in the beaten egg and fry till lightly golden. Traditionally it is served with chilly sauce but it is bit too hot for me so I make my own dipping sauce. Mix all the sauce ingredients together and your chilly garlic soy sauce is ready. Serve hot begedil with this dipping sauce or you can try it with mayonnaise.

Crunchy Fritters With Onion And Oats


It is raining heavily outside and inside everything is so wetty and moist , for last two days sun is coming for a very short tour of 10 minutes and then signing off for the whole day. Now in such a whether condition I need something crunchy with my cup of tea. Now “O” came for my savior, you must be thinking who is “O”… it is onion and oats from my pantry. A quick and delicious crunchy fritters with onion and oats is what I prepared today.


Ingredients:
Onion   6 medium
Egg 1
All purpose flour 2 tablespoon
Cumin seed 1/4 teaspoon
Carom seed 1/8 teaspoon
Quaker oats 1 cup
Salt and pepper to taste
Cooking oil for deep frying


Procedure:
Peel and cut onion into thick slices. Now in a bowl beat one egg mix flour in such way that no lumps is formed and to it add carom, cumin seed, salt and pepper and then little water to make a thick batter. In a flat surface spread Quaker oats you can slightly toast them if you wish. Dip onion rings, one at a time, in batter to cover. Let excess batter drip back into bowl. Now roll them on oats and working quickly place each ring in hot oil. Fry rings a few at a time about 2 to 3 minutes or until golden brown. Remove from oil with fork, drain on paper towel. Sprinkle salt and pepper before serving and have this crunchy fritters with onion and oats with chilly garlic tomato sauce and mustard sauce (I put both the sauce in layers and it turned out great)or any sauce or dip of your choice.

Delicious Saluyot (Jute Leaves) Fritters


Friend today I will share with you a very delicious but uncommon fritters recipe with you. Yes today a unique awesome fritters with Saluyot that is jute leaves. If saluyot is not very known to you then visit any (specially the Asian ) farmers market and you’ll notice stand after stand filled with bundles of leaves from their you can easily choose sluyot or jute leaves. Look for the fresh, green, smiling leaves. What is in saluyot(jute leaves) that should merit your attention? Firstly, it is rich in beta-carotene for good eyesight, iron for healthy red blood cells, calcium for strong bones and teeth, and vitamin C for smooth, clear skin, strong immune cells, and fast wound healing. In other words, saluyot is a nourishing green leafy vegetable. A very delicious and easy recipe just for you.
Ingredients:
Fresh saluyot       4 cups coarsely chopped
All purpose flour 1/ 2 cup
Rice flour 1/4 cup
Baking powder 1/8 teaspoon
Sugar 11/2 table spoon
Salt and pepper to taste
Vegetable oil for deep frying
Procedure:
Choose only the fresh leaves and wash them well. Now chop them coarsely. Take the leaves in a bowl, add all the ingredients. Mix well. Add a little water if needed to make a thick batter. Now heat oil in a frying pan scoop up a table spoon of batter and put to fry in the hot oil. Remove when nicely done, it will turn bit black when deep fried but make sure you don’t burn the fritters to make it black (haha just kidding).Drain thoroughly, and place on absorbent paper. Serve hot. You can have it with any mustard sauce but I love to have it with mango mustard sauce you can get the recipe here. I hope you will try this delicious saluyot(jute leaves) fritters and love it too.

Finger-licking Oven-Fried Fish


I always look out for food that are heart healthy and on this quest I found another finger-licking mouthwatering oven fired fish recipe. Yes it is low calorie crispy baked fish fillets that will help you to cut some calories from your diet but not taste. So all you weightwatcher and heart healthy people don’t miss the this super delicious recipe.
Ingredients:
Fish fillets  2 pounds
Fresh lemon juice 1 table spoon
Fat free milk 1/2 cup
Hot sauce 2 to 3 drops
Fresh garlic paste 1 teaspoon
Onion powder 1/4 teaspoon
Salt and white pepper to taste
Coarsley grind cornflakes 1/2 cup
Vegetable oil 1 table spoon

Procedure:

Pre heat oven to 475°F. After properly cleaning the fish wipe the fillets with lemon juice and pat dry. Now in a bowl mix garlic milk and hot sauce you can add more hot sauce if you want it to be more hot and later on if the temparature of your dine table rise a few degree then that’s totally your resposibity(lol….). Now on a plate mix salt, pepper,onion powder, coarsley grind cornflakes . Let fillets sit briefly in milk and then remove it and coat fillets on both side with seasoned conflakes. Let it stand breifly until the coating sticks to each side of fish. Arrange on a light oiled shallow baking dish. Bake for 20 minutes on middle rack without turning. Cut into six pieces. Serve with Coleslaw and lemon wedges.

Cilantro Fritters With Mint Dip


Last Saturday my Dida ( Granny) visited us and shared a time tested recipe from her kitchen which my Dadu (Grandpa) love the most. My Dadu left us for almost 18 years ago but whenever we ask for some recipes my Dida bring out from her magic box something which my Dadu loved. I am moved to see a magic chemistry that keep them in a deep loving relationship even when one left for an eternal journey.
In today’s world when we are busy accumulating material things for quick satisfaction, when love itself is commercialized do you think that we can save real love and if so share your thoughts. While you are giving this topic your serious thoughts fry some cilantro fritters and dip them in mint dip and I am sure you will have some clear and fresh thoughts. Take a look on the recipe-

Ingredients:
Fresh cilantro   1 bowl chopped
All purpose flour 1/2 cup
Rice flour 1/2 cup
Salt and pepper to taste
Water 1/3 cup
Sunflower/ vegetable oil - to deep fry
Mint Dip
Greek yoghurt / or hung yoghurt – 1/2 cup
Fresh mint leaves hand full chopped
Sugar 1/2 tea spoon (optional)
Salt to taste
Procedure:
In a big bowl take all purpose flour, rice flour, salt, pepper, chopped cilantro mix well. Now add water little by little so that it makes a thick and tight mixture. Heat oil in a pan. When the oil is hot enough scoop out large spoonful of the cilantro mixture and place gently in the pan. Let it cook till each cilantro fritters is brown both side. Carefully remove fritters and place on a paper towel-lined plate to remove excess oil. Now in a bowl mix all ingredients for mint dip and then serve the cilantro fritters hot with mint dip. Relish this crunchy flavorful fritters with fresh mint dip and think that how we can save true love and this world with true love!

Delicious Green Veggies With Fresh Dill


Another fresh new year is here… to live , to love and laugh and to work for the best. For all this we need to keep our body fit and mind sound. It is also the time to unload all those calories from our system that we merrily chew down during holidays(ha ha). It’s time to turn to those healthy foods. Fresh green vegetable are like good friends who came to rescue when you feel a slight guilt for all those sinful delights. So last night I cooked some green vegetables with fresh dill leaves and enjoyed a delicious healthy dinner which I would love to share with you.
Ingredients:
Cauliflower or broccoli 1 small cut into bite size florets
Baby potato 8 to 10 boiled
Carrots 1/2 cup julienned
Red yellow and green pepper 1 each julienned
French beans 6 to 8 (top and tail the beans)
Green peas ½ cup
Garlic 3 to 4 cloves crushed
Olive oil 2 table spoon
Lemon zest 1/2 tea spoon
Lemon juice 1 tea spoon
Fresh dill leaves hand full chopped
Salt and pepper to taste
Procedure:
For this plate of mixed vegetable I stir fried the garlic in olive oil till the aroma filled the air then add cauliflower or broccoli ( you can use both) and French beans. Cover the pan with a lid so that this vegetable get a cooked for a minute then add all the other vegetables, salt and pepper then turn and toss till the vegetables are cooked but still crunchy. Then add the boiled potato, lemon juice , lemon zest and the fresh dill leaves and mix well. Adjust seasoning and my delicious stir fried green vegetable is ready to serve. I have it with garlic bread, you can have it with any bread roll of your choice and you feel healthy and complete with this colorful savory plate.

Crispy Fish With Spinach Butter Rice And Orange Sauce (Christmas Special)


I know everyone of you are busy with your last minute Christmas preparation and I am also waiting for a rocking day but this year I plan a non –hassle Christmas dinner. A very delicious, eye appealing dish and a total meal and easy to cook so that you have lot of time to spend with your friends and family. I hope you will like crispy fish with spinach butter rice and orange sauce a simple yet elegant festive dinner plan.
Ingredients:
For Crispy Fish
Fish fillets 4 pieces
Black pepper to taste
Salt to taste
Mustard sauce 1 tea spoon
Lemon juice 1 table spoon
Ginger garlic paste 1/2 teaspoon
Oil to deep fry
For Batter:
All purpose flour 2 teaspoon
Corn flour 2 teaspoon
Salt to taste
For Spinach
Spinach 1/2 bowl blanched and roughly chopped
Garlic 2 clove chopped
Butter or diet butter 1/2 teaspoon
Mozzarella cheese 1 cube
Salt and pepper to taste
For Butter Rice
Cooked long grain rice 2 small bowl
Butter or diet butter 1 heaping spoon
Red green and yellow bell pepper 1/4 cup finely diced
Salt and pepper to taste
For Orange Sauce
Butter 1/2 teaspoon
All purpose flour 1 teaspoon
Orange juice 1/2 to 1 cup
Sugar a pinch
Salt and pepper to taste

Procedure:

Don’t get panic seeing the long list of ingredients but truly speaking friend if you go through the procedure then it is just some prior preparation and then a delicious dish can be presented within half an hour and  your guest book will be filled with overwhelming appreciations.
Now I will start with Orange sauce
Place a fry pan on medium flame and then let the butter melt in it, add one teaspoon of flour stir for half a minute then add the orange juice. Stir for few minutes adjust seasoning. Let it thicken and then put off the flame.
For Spinach
Put a pan on flame let the butter melt in it then add the chopped garlic stir and then add the balanced spinach in it. Stir for 2minutes adjust the seasoning. Then add the grated mozzarella cheese in it let the cheese melt it will give a chewy texture to the spinach. Put off the flame your spinach is ready.
For Butter Rice
Put another pan on flame let butter melt in it add the bell pepper in it. Stir for a minute then add the cooked rice (I use the good quality of basmati rice) then add salt and pepper. Mix well and you are done with the butter rice.
These steps you can prepare in the day time if you are making dish for dinner, just you should have to on your microwave to warm them up when you dish out.
For Crispy Fish
Marinate the fish fillets with salt, pepper, mustard sauce, ginger garlic paste and lemon juice for half an hour. Now take a bowl take flour and corn flour in it and now pour soda water in it (this will make your fried fish really crisp), I am not giving any measurement of it just make sure that the consistency of the batter should not be too thick or thin but the medium consistency to coat well then deep fry those fish fillets. Drain out the excess oil.
Your whole dish is complete now come the presentation part that’s up to you, you can use your creative to make it appealing but if you ask me I take small bowl place a layer of butter rice and then spread the spinach above it then another layer of rice and then press well. Now in the serving plate I just turn the bowl upside down and pour the orange in the base of the plate and place the crispy fried fish above the rice tomb.
Serve with some green salad and a delectable dessert. A rocking hit Christmas dish, I hope you will like it.

Delicious Vegetable Chicken Fritters


Today we all Indians are celebrating another year of freedom.. On this special occasion I want to wish all Indians everywhere in the world A Very Happy Independence Day 2010.
Few friends of mine are coming to my place today to celebrate this day in our own special way, I know they are happy go lucky type and will love a cup of delicious tea or coffee with something crispy and peppy. So today for a while I keep aside my health freak soul and indulging in to something that is a once in a while treat but too tasty and I hope you all will love it. This are deep fried Vegetable Chicken Fritters.

Ingredients:
Egg           3
Chicken small cube 1/2 cup
Carrot small cube 1 cup
Fresh beans sliced 1 cup
Onion slice 1/2 cup
Capsicum small cube 1/4 cup
Green chilly 2 chopped (optional)
Ginger garlic paste 1 teaspoon
Fruit salt / baking soda 2 to 3 pinch
Flour 1 1/2 cup
Sugar 1/2 teaspoon
Cayenne powder 1/2 teaspoon (optional)
Salt and pepper according to taste
Chicken stock 1 cup
Soya bean oil as needed for deep fry

Procedure:
First beat 3 egg in a bowl whisk well. Then scrambled this eggs. Keep aside. Now boil the chicken cube with a peiceof onion, ginger and two cloves of garlic. Keep aside the chicken cube and the chicken stock separately. Now take a teaspoon of oil in pan and slightly fry the chicken cube with salt and pepper. Take a big bowl put flour in it then all the vegetables listed in the ingredients one by one, then add sliced onion and ginger garlic paste ,chopped green chili, cayenne powder, fruit salt( this is mainly used as rising agent) if you don’t have it use baking soda, sugar , salt and pepper. Mix well then add the scrambled egg and the fried chicken cube , then slowly add the chicken stock the consistency of the batter should be thick. Now in a frying pan heat oil sufficient to deep fry this fritters. Take a big spoon and drop spoon full of batter into the oil. Fry till golden brown. Now drain the excess oil on a paper towel and serve hot with your favorite dip or hot and sour tomato ketchup and simple salad. Your delicious Vegetable chicken fritters are ready to cherish with friends and family.

* This vegetable chicken fritters are bit heavy so it is suitable for those who are completely healthy . Keep it in mind before having it.
