HOT BRAZILIAN BEAN SOUP


World Cup fever is on. Brazil is one of my favorite team, I thought that today while watching Brazil Vs Chile, why not bring the taste of Brazil in my dinner table, today I cook hot Brazilian bean soup. This is a very delicious and healthy soup. Black bean is one of the most beneficial in the whole bean family. It is rich in protein, vitamin B, magnesium, maganese, iron and phosphorous, also it is high in folicin ( vitamin B9).If I am not wrong, Black bean is one of the staple diet of Brazil.
INGREDIENTS:

Olive oil      1 table spoon
Onion 2 chopped
Celery 1 chopped
Garlic 1 teaspoon chopped
Red bell pepper 1 chopped
Green bell pepper 1 chopped
Vegetable broth 3 cups
Black beans 1 can un drained
Ripe tomatoes 1 chopped
Ground cumin 2 1/2 teaspoon
Lemon juice 2 tablespoon
Red chilly powder 1/2 tea spoon (optional)
Boiled and mashed potato 1 (optional)
Salt and pepper to taste
Nonfat yoghurt 1/2 cup
Ginger 1/2 teaspoon finely chopped
Fresh cilantro handful chopped

PROCEDURE:
Heat olive oil in a large non stick skillet over high heat. Add onion, bell peppers then stir for 2 minutes then add garlic and cumin. Stir for another 1 minutes. Then add the red chili powder and chopped tomatoes. Stir for 2 minutes. Add the black beans mix well then add the vegetable broth. Add all the ingredients except cilantro, lemon juice and nonfat yoghurt. Let it cook for 30 minutes or until the beans become tender.If you want your soup a bit thick then mix the mashed potato, then adjust seasoning. Ladle soup in bowls. Sprinkle lemon juice, chopped ginger, cilantro. Spoon dollop of yoghurt into each bowl. Your hearty hot delicious Brazilian black bean soup is ready to serve. I think you will love to have it while watching Kaka, Fabiano or Robinho's great shot, with the beats of Samba.
