DELICIOUS GREEN SOUP


This weekend my heart is telling me to go green. So I tried out this delicious green soup with a lot of green leafy vegetable. I am sure you will like this extraordinary tasty and healthy soup.
So what are you waiting let start-

INGREDIENT:

Fresh spinach leaves 500grm
Lettuce leaves 500grm
Spring onion 250grm
Cumin seed 1tsp
Garlic 1tsp crushed
Water /
vegetable stock ½ liter
Tofu 125grm grated
Yoghurt 125 milli liter
Olive oil 1tbsp
Salt and pepper according to taste



PROCEDURE:

Wash all the leafy vegetable well and then chop them put them in a sauce pan with cumin seed, olive oil, garlic and vegetable stock or water. Let it boil . When it start to boil place a lid and let it cook for 30 minutes in slow flame. Now strain the leafy vegetable and put it to the blender to make a fine paste. Then again place the pan on a flame with the strained stock and then add the green paste let it boil added the grated tofu ( this is optional you can avoid this if you are not a great fan of tofu ) and the smoothly beaten yoghurt. Boil it in a slow flame for another few minutes then add salt and pepper. And now it is ready to serve. Garnish it with some carrot and zucchini julian.

SPICY YUMMY FRANKFRUTERS


Are you wondering what to serve to your friends with a nice pot of tea? Choices are many but I know you are tired of eating and serving the same old snacks . But now it’s time to relax I am giving you something new which I have tried and it turned out delicious. So what are you waiting for try this Spicy Frankfurters which is also healthy as I haven’t use a single drop of oil in this recipe. Try this and let me know.

INGREDIENTS:

Frankfurters 250grms
Flour 1tbsp
Water ¾ cup
Tomato ketchup ½ cup
Vinegar 2tbsp
Sugar 2tsp
Prepared mustard 1tsp
Salt and chilly powder according to taste


PROCEDURE:

First of all halved the frankfurters . Now in a bowl mix flour with 2tbsp of water and then add the all the remaining ingredients mix well . Put a pan on the flame give the mixture and remaining water cook till it slightly thickens, add the frankfurters and continue cooking for 20 to 25 minutes.
Serve it with toasted bread.

HEALTHY PAN FRIED TILAPIA FISH


My love for fish is growing day by day but I restrict eating too much due to health reason. But once in a week is good so today I thought of preparing one of my favorite fish Tilapia. This pan fried tilapia recipe is fuss free , you don’t have to sweat too much in the kitchen yet very delicious and healthy quick meal is prepared within minutes. . So give it a try and let me know whether you like it or not.

INGREDIENTS:

Tilapia fish fillets 4
Olive oil 4tbsp
Honey 1tbsp
Lemon juice 3tbsp
Fresh parsley 1 tbsp (finely chopped)
Baby carrots 6 (whole, peeled and
blanched)
Cherry tomatoes 4
Baby potato 4 (boiled)
Spinach leaves 2 to 3 (blanched)
Broccoli 4 piece (blanched)
Macaroni 1 small bowl
Parmesan cheese 2tsp
Mayonnaise 2tsp
Salt and pepper according to taste
Bread croutons 2 to 3
Balsamic reduction 4 to 5 drop (for garnish)
Fresh rosemary 2 sprigs


PROCEDURE:

Marinate the fish fillets with salt ,pepper,1tbsp of lemon juice,1/2 tbsp of olive oil and chopped parsley. Keep aside. In the meantime prepare the vegetable and macaroni.
Boiled the macaroni as per instruction drain of the extra water and now mix salt pepper, mayonnaise and parmesan cheese and put in a small bowl. Now put a pan on flame give 2 tbsp of oil and shallow fry the marinated tilapia fish. Now put the pan again on flame give 1½ of olive oil , 1tbsp of honey and 2tbsp lemon juice stir and put the blanched carrot, potatoes toss and put off the flame then put the cheery tomatoes and spinach leaves toss again. Everything is prepared, now it’s time to arrange the whole things in appetizing way. Take a white serving plate put the blanched broccoli in the middle and above it place the pan fried tilapia and sprigs rosemary. Take the small bowl of macaroni with some bread croutons above it place it on one side of the plate( you can avoid this part if you are a strict weight watcher) and the glazed vegetables beside it . You can garnish the plate with few drop of balsamic reduction. Now your colorful meal is ready.

CARAMEL CUSTARD


To day while I am cooking Caramel custard , I remember those golden old days of childhood where life seems to be so easy like fairy tales. We through roof top parties in summer vacation and there Mom use to cook some delicious dessert and all we kids and even the elder ones use to relish those heavenly dishes. So I thought of cooking one such old time favorite of mine to celebrate my 100th post for all my new friend followers whose unmatched love and constant support keep me going. What more can I say than-I Love You more than word could say. I Love you more and more each day. Be with me, this friend of yours need you always.
Join in my celebration with this light tasty pudding. I know you all will love it and when you have it remember I have send lots of love so that it become more sweet.

INGREDIENTS:

Low fat milk 500ml
Egg 4
Sugar/
sugar substitute 5tbsp or
according to taste
Vanilla essence 1tsp
Butter/ Diet butter 2tbsp
Sugar 2tbsp for caramelizing
Chocolate sauce for garnish


PROCEDURE:

First of all take the milk and eggs beat it so that the whole thing mix well. Now add the vanilla essence and 5tbsp of sugar beat well so that the sugar dissolve . When the whole thing mix well keep aside. Now in a pan take 2 tbsp of butter and sugar stir until it caramelize.
You can use custard mould but I use small muffin tins I put the caramel syrup on the individual base of the mould then pour the milk mixture. Now cover each mould with aluminum foil then on a slow fire steam it for 40 minutes. Turn off the gas and when it cools place it in a chiller tray. After 2 hrs just press a little bit and turn the container upside down on a plate . Before serving just spread some chocolate sauce over it . Molded rich caramel custard is ready to eat.

DELICIOUS GRAPE APPLE MOCKTAIL


If you are totally wired out with the work pressure of the week and need a refreshing drink to sit and relish then this grape apple mocktail is just for you. I was in my friends place just a day before where she make this delicious mock cocktail for us. It was so delicious that I can’t stop sharing this with you . I am going to make this for the weekend. Give it a try and I am sure you will like it and who knows it may add spark to your romantic evening.

INGREDIENTS:

Fresh lime juice ¼ cup
Apple juice ½ cup
Grapes juice ½ cup
Ice cube 8
Vanilla ice cream 2 scoop
Carrot (thin
cylindrical slice) 6
Cheery 2


PROCEDURE:

First of all take the shaker put the ice cube , fresh lime juice , apple juice and grape juice. Shake it well . In a high ball glass put the carrot slice ( with a sharp knife you can make some decorative piece) now pour the drink in the glass, ice cube and then place two spoon of ice cream above it. Add more color with a bright red cheery.

GRILLED CHICKEN SANDWICH


Mid week everyone of us have tight schedule and very less time to cook . I am no exception so I tried some delicious easy yet healthy sandwich ideal for breakfast. I hope you will enjoy the taste as I have enjoyed it. Let the sunshine in your breakfast table.

INGREDIENTS:

Boiled shredded chicken 100 grm
Sandwich Bread 2 piece
Green bell pepper chopped 2tbsp
Diet egg less mayonnaise 2tsp
Mustard sauce 2tsp
Capsico sauce 1tsp
Diet butter 2tsp
Lettuce leaves 1
Salt and pepper according to taste


PROCEDURE:

Take a bowl and mix all the above ingredients(you can use normal mayonnaise instead of diet mayonnaise) except the lettuce and the sandwich bread. Now take a bread slice spread diet butter on it keep the lettuce leaf and then the chicken filler. Now keep the other bread slice over it.
Now spread some diet butter on the top slice of bread and grill it . This Grilled chicken sandwich with a glass of ORANGEY FRUIT JUICE will definitely make your day shine .

MOTHER’S DAY SPECIAL-GRILLED CHICKEN WITH RED WINE SAUCE


WISH YOU ALL A VERY VERY HAPPY MOTHER’S DAY.
Yes today is that special day for the most loving person in our life that God could have ever gift us our most loving and wonderful Mom. Some body have said it right God could not be everywhere and therefore he made mothers. For my Mom ( whom I call MA) today I dedicate this lines-

For today I prepare a very special dish and I hope she will love it. Let share this grilled chicken with red wine sauce with you, hope you will like and so do your loving Mom.



INGREDIENTS:

Chicken breast- 100-125 grms
Worcestershire sauce 1tsp
Brown sauce 100 ml
Red wine 60 ml
Oregano 1 pinch
Olive oil 1tbsp
Salt and pepper according to taste


PROCEDURE:

First of all clean the chicken breast and make some slit on it’s surface with knife. Marinate the chicken with salt pepper and worcestershire sauce for 30 minutes. In a sauce pan mix brown sauce, red whine and oregano put it on slow flame cook until it thickens. Now grill the chicken breast brushing some olive oil in it.
In a serving dish place the grilled chicken pour the hot wine sauce in it . Now serve with salad and mashed potato (potatoes which have been mashed together with a knob of butter and a splash of milk.). I am sure my Mom will relish this dish and hope your too.

Mother’s have toiled, they have sacrificed, they have given more than we can ever imagine possible. It’s now our turn to show them that we care, a single day is not sufficient for the unconditional love that they shower on our life. So for me each day is Mother’s day, we should remember that an affectionate loving hand is always above us who says (may be not always in words)- I love you child. I too say – I love you Ma.

CRISPY FISH IN CHINESE STYLE


As Mother day is coming closer I am trying out for some exotic dish which my Mom like the most. This bit spicy and crispy dish is one of my Mom’s favorite. I hope this easy to cook recipe can also win your Mom’s heart .Give it a try and give me your feed back .

INGREDIENTS:

Boneless fish cube 500grm
Egg 1
Onion 2 quartered
(bring out the flakes)
Garlic 3tbsp finely chopped
Green bell pepper 1 cubed
Green chilly 3 to 4 chopped
Monosodium
glutamate 2 pinch
Spring onion 2tbsp ( finely chopped)
Spring garlic 2tbsp(finely chopped)
Salt & pepper according to taste .
Refined Oil to dip fry


PROCEDURE:

Take bowl put the egg , a pinch of monosodium glutamate, salt , pepper whisk well and add the fish cube. Dip fry the fish cube. Keep the fried fish in the kitchen tissue paper so that the extra oil is soaked. Now put another pan on high flame (in Chinese cooking always use high flame for it retain the color and crispiness of the vegetables and also the food value) give 2tbsp of oil from the leftover oil where you have fried fish. Add the onion flakes , capsicum cube , green chilly toss for 1 to 2 minutes then add the chopped garlic, fried fish again toss for a minute .Then add another pinch of monosodium glutamate,salt & pepper toss. After that add chopped spring onion and spring garlic.
Toss for another minute and your crispy fish in Chinese style is ready.

RIPE RED TOMATO MOCKTAIL


Color have its own healing effect and some time to charge my mind and body with strength and energy I love to have food and drink with vibrant red color. So today I tried this ripe tomato mock tail to charge my power house. Tomato is good antioxidant and good for health. I make this delicious summer quencher and telling you it is just COOL!

INGREDIENTS:

Ripe red tomatoes 8
Lemon 2
Black salt 1 tsp
Sugar 8tbsp
Lemon wedges 7


PROCEDURE:

We need juice of tomatoes and lime. So first make juice of tomatoes strain it then add the lime juice add black salt, sugar, water put the whole mixture into a shaker and shake it until the sugar dissolves. Pour the whole mixture in a high ball glass put lemon wedge and crushed ice above it and serve chill. You can also add some greens to it with some mint leaves or cilantro or a celery stick .

Serve a glass full of love to your beloved and make someone’s day worth .

FRENCH CHICKEN


You make good chicken, but you are always on the lookout for a way to make it better! This tasty recipe will revitalize your family dinners with food your family will love.
Feeling inspired. Try this quick and easy simple healthy chicken recipe tonight.

INGREDIENTS:

Chicken 500grms (boneless)
Beans
and green peas 1cup
Egg 1
Butter/Diet Butter 3tbsp
Water/
Chicken stock 1big cup
Salt and pepper according to taste


PROCEDURE:

Put a pan on fire give 2tbsp of butter as the butter melts add beans and green peas. Stir for 2 minutes add the chicken pieces, salt and pepper then stir for another 2 to 3 minutes. Now add water/chicken stock cover the pan and cook till the chicken is cooked. Then add the whisked egg
and 1tbsp of butter. Stir and serve with bread rolls.
