FISH IN ORANGE SAUCE


After long day of work when I returned home today I find one of my high school friend Suket dropped a message in my voicemail that he will be coming tonight in my house for dinner. We use to call Suket a pussy cat in school because he was just mad about fish. Even you boil some fish and sprinkle some salt and pepper his mouth will start watering. So for such a friend I know what I have to cook and fortunately I have some fish in my refrigerator, so I don’t have to run to market. I know I have to cook something tasty yet fast as I am tired too . So I experimented and cook this fish in orange sauce it turned out awesome. Now I am waiting for Suket to come and in the mean time let me share this recipe with you all . I hope you will like it.

INGREDIENT:

Fish cube 500grms
Onion 4 medium size(paste)
Ginger 1tbsp (paste)
Paprika 1tbsp
Nutmeg
powder ½ tsp
Vegetable oil 5tbsp
Raisin 12
Orange juice 2 cup
Sugar ¼ tsp
Salt and
pepper according to taste
Fresh coriander Finely chopped (optional)


PROCEDURE:

Wash the fish cube and marinate it with salt pepper and ¼ tsp of nutmeg powder. Now put a pan on flame give 3 tbsp of oil and sauté the marinated fish for some time say about 5 min. After that take out the fish from pan and keep aside. Now in that pan add 2 tbsp of oil and then give the onion paste sauté a little bit . Add ginger paste, sugar, paprika, the rest of nutmeg powder , salt ,raisins and stir for 1 min now add the sautéed fish . Stir for ½ min and add the orange juice .Let it boil and as the gravy thickens put off the flames. Garnish with a handful of finely chopped fresh coriander leaves and some fresh green. chillies.

CHICKEN CHEESY


I believe that art of cooking is beyond recipes it comes form the heart of the one who cooks. I think a good cook speaks out his or her untold words in the recipes, sometimes we don’t find word to show our love and emotion for our loved ones, in those times some well prepared and well garnished food speaks all for you. From time immemorial food have played such vital role to build up strong bonds between hearts. But as we know that in today’s fast and speedy life we have to take care of our heart and so have to avoid those oily and fat contained foods. But when in weekends our heart turn a little liberal for those grown up kids (I hope you understand whom I am talking about ) . So this recipe is for those who want to be a little liberal this weekends.

INGREDIENT:

Chicken 1 medium size cut into pieces
Onion 1 large
Garlic 6 flakes
Green chilly 4
Ginger 1 inch piece
Clove 4
Cardamom 4
Cinnamon ½ inch
Cumin seed ½ tsp
Coriander seed ½ tsp
Tomatoes 100grms peeled and pureed
Chicken stock 1 cup
Grated cheese as your heart permit
Salt according to your taste
Chilly powder according to your taste (optional)



PROCEDURE:

First of all take onion, ginger, garlic and green chillies in your grinder and make a fine paste. Now ground the cinnamon, clove , cardamom, cumin and the coriander seed finely. Mix all the ingredients except the cheese in chicken. Left this marinated chicken for 10 min. After that put the chicken in a baking dish sprinkle grated cheese at the top and bake it for 1 hr in a moderate oven or until the chicken is tender.

SCRAMBLED EGG WITH LOVE

I told you in my earlier post that I will give you some very exotic heart warming recipes for this Valentine Day. Visualize this dream - that on a fine morning your boy friend or hubby standing in front of the breakfast table with some delicious preparation garnished beautifully and holding the dish as shown in the picture and telling you with all romantic emotion gathered -Love just for you ! How will you feel ? top of the world . I guess so. So today’s post is for those men who is not so good cook yet want to surprise there beloved with there culinary skills this Valentine. This recipe is dedicated specially for them.( I mean to say it is very easy to cook anybody can cook it.).

INGREDIENT:

Butter 1tbsp
Prawn 10 to 12
Onion 1 big chopped
Bell pepper 1 cubed
Garlic ½ tbsp finely chopped
Green chilly 1 finely chopped
(or according to taste)
Tomato 1 chopped
Egg 6
Milk 2 tbsp
Sugar 1tsp
Salt according to taste



PROCEDURE:

First of all clean the prawn well. Beat all the eggs in a bowl and put aside.
Put a pan on flame and now give butter in it as it melts add prawn and sauté a little bit.
Now give chopped onion, bell pepper , green chilly, and garlic chopped. Fry a little bit then add milk mix and then add the beaten egg , add salt and sugar. Mix well. Now add the chopped tomato. The taste of this dish is little sweet . So I hope your sweet heart will love this. This is a typical breakfast dish. It is good with bread . Serve warm in big cabbage leave.
I hope kids will also love this dish. And if you have some serious health problem then skip butter do it with any vegetable oil the taste may vary little bit but make sure your health is more important than your taste bud’s .

HONEY CHICKEN


Can you smell some romance in the air ? yes you have guessed it right I am talking about the very special day of every loving heart the Valentine Day. Count down has already began and few friends of mine started their shopping too. But I am collecting recipes for that special day not only for myself but to share with you all. My first recipe on this series is Honey Chicken. Enjoy this special dish , a bit little spicy but I think spring is the idle time to be a little liberal with foods, after all its time to pamper our hearts. But with all this liberation message don’t forget your regular fitness plan . Take care of your heart because it is the most precious and priceless place , as all your beloved stays over there !

INGREDIENTS:
Chicken               boneless cube 500grm
Lemon juice 2 tbsp
Fresh mint leaves paste 1 1/2 tbsp
Corn flour 2 1/2 tbsp
Egg 1
Onion 1 big finely chopped
Green chilly 3 or according to taste
finely chopped
Bell pepper 1 cubed
Honey 2 tbsp
Spring onion handful finely chopped
Ginger 1tbsp fine julians

White sesame 3 tbsp
Vegetable oil 10 tbsp (don’t get nervous)
Salt according to taste
Black pepper ½ tsp



PROCEDURE:

First of all marinate the chicken with lemon juice for 1 hr. After that drain the lemon juice and take the chicken cubes in a bowl add salt , mint paste, egg and corn flour mix them very well . Then sprinkle the sesame seeds above it, now fry the chicken. Put it on a tissue paper and let it soak all the excess oil in it.
Now put another pan on flame. Give 1 ½ tbsp of oil (you can also use sesame oil for this) give chopped onion stir till transparent now add bell pepper green chilly and stir for a minute. Add the fried chicken toss a little bit. Now add honey, spring onion , ginger julian ,salt and black pepper . Stir a little bit and its ready to serve.
Noodles and rice is best with it. But you can also try it with bread , I hope it will definitely spice up your romantic dinner date.

BAKED POTATO AND APPLES “ANNA”


Sometimes preparing break fast become a real problem . Mainly when you are in hurry. You want to have fruits, vegetables which will not add too much calorie yet will be tasty and fast to cook, a perfect balance and blend. I face such problem many a time so always try to find out some unique recipes that meet all my need.
While I am going through Vegetarian Times I found this delicious recipe . I hope you will like it. This layered dish is a simple, satisfying mixture of apples, potatoes and onions.

INGREDIENT:

Crisp, sweet apples 2 large cored
andsliced 1⁄4-inch thick
Red or white boiling potatoes 2 lb. sliced 1⁄4-inch thick
Vegetable oil 2 to 3 tsp

Salt to taste
Freshly ground black pepper to taste
Red onion 1 chopped
Nutmeg freshly grated

PROCEDURE

Preheat oven to 350F. Oil bottom and sides of large, cast-iron skillet or baking dish. Arrange layer of potatoes in skillet. Sprinkle with salt, pepper and half of the onions. Place layer of apples on top, using half of the apples. Repeat layers, ending with layer of apple slices. Sprinkle with nutmeg, and press down mixture
with plate. Remove plate. Bake until apples are tender and potatoes are crispy and brown, 35 to 40 minutes. Let cool 10 minutes before cutting into wedges. Serve warm.

QUICK RELIEF FROM INDIGESTION


Festive season has just passed and with lots of party and fun the problem which many of us face is indigestion. There are many reason for this disorder-

Indigestion happens when the body has a hard time breaking down and assimilating foods. Symptoms may include, heartburn or burning of the stomach, a feeling of heaviness long after the meal, belching, gas, flatulence, bloating, nausea and a poor appetite. Most digestive problems can be traced to the type of food eaten and poor eating habits. Refined, processed and altered food all stress and wear out the digestive organs. Saturated fats and hydrogenated oils also slow digestion. Over consumption of coffee, alcohol, cigarettes and processed foods cause an overly acidic condition in the stomach and make it more worse. Other contributing factors may include, eating too fast or when stressed out, not chewing well, stomach acids and enzymes, food allergies and sensitivities, improper combinations of different types of food, and drinking lots of liquids with meals which dilutes the digestive fluids.
Some good home remedies for indigestion are given below-

One teaspoon of seeds of ajwain taken with a little rock salt is good home remedy for indigestion.

Lemon juice mixed in a cup of hot water taken before meal help to prevent acid – indigestion as it fight against bacteria.

Mix equal part of baking soda and water for immediate relief from indigestion.

Add one teaspoon of cumin seed in a glass of water and drink it.

Application of ice bag for half an hour after meal is also good to get relief from indigestion.

Chewing small piece of fresh ginger with a bit of salt 10 to 15 minutes before meal helps in digestion.

Fresh peppermint is also good to cure ingestion.

New year 2009 is all about shimmer and sparkle. Know some simple ways to shine in health and happiness this year and live a charming life full of joy and love.

Keep the mind at peace to get that instant glow. Deep breathing for at least 10 minutes relax your mind as well your body. All work and no sleep make no help so make sure to take 8 hrs sleep as it rejuvenates the system.

Get your body to send positive vibration. It is not always your look that put impact on other person but your total personality.. So this year spread the aura of your positive vibes. Let your cheering smiles, your kind looks shine every where you visit.

SEMOLINA IN WONDERLAND


Hello! Friends back again after a short break, hope you have enjoyed your Christmas and New year with great fun.
This is my first post of the year 2009 . In my first post of this year let me share with you my New year short 3 days vacation to my cousin brother house with all my family and some other relatives. You can‘t imagine how much fun and crazy moments we all share there.
There were in total 10 crazy kids and a little baby boy about 5month’s old in our big team . The baby was entraining us with his outer world words Boooo! Ba ba ba!
And those kids started all those mischievous stuff and the older ones they too turn younger and one of my sister in-law is number one prank star. So now you can have a idea what we have done in those three days. We also visited a nearby amusement park and enjoyed some wonderful moments over there. I think family is the greatest blessing of God ,without whom you can never alone have the total fun of life.


Anyway one day I cooked some semolina for the kids. It become a instant hit among the little and the grown up kids .I am sharing that with you all today. Hope you will like it.

INGREDIENTS:

Semolina 2cup ( slightly dry roasted)
Mustard seeds ½ tsp
Onion 1big (finely sliced)
Ginger 1tsp(finely chopped)
Mixed vegetables ½ cup ( small cube )
(carrot, cauliflower,
beans, peas)
Prawn 7to 8
Green chilly 1 minced
Cashew 10 to 12
Raisin 7 to 8
Coriander 2 tbsp (chopped)
Tomato puree 3tbsp
Olive oil 5 tbsp
Sugar 1 tsp
Lemon juice 1tbsp
Water (hot) 4 ½ cup
Salt & pepper according to taste


PROCEDURE:
Put pan on flame and then give oil in it. Now give the mustard seeds as it starts to crack add the sliced onion . Fry till translucent and then add vegetables and fry a little bit and then add prawn .Stir a little bit .Now add the semolina ,tomato puree, green chilly, cashew, raisin, salt ,sugar, pepper and ginger. Stir for a minute. Now add the hot water
And keep on stirring. As the semolina get soft and thick put off the flame. Now add fresh coriander and lemon juice. Serve hot. This is a complete dish . You can have some fruit salad as a side dish.
