Egg Salad With Honey Lime Vinaigrette


Egg salad with lime vinaigrette is one of my favorite when I am looking for some healthy snacks and I am in hurry or on the go. This dish is quiet a good feeler and boost up your energy as eggs are quality source of protein. Eggs are good for the brain function as they contain choline. Choline is a nutrient that regulates the brain, nervous system and cardiovascular health. It is mainly good for the pregnant women, helps in fetal brain development and prevents birth defects. Eggs are good for eyes as they contain lutein and zeaxanthin. These nutrients are found in eggs more than other food sources. Consuming eggs lowers the risk of cataracts. Eggs are also good source of Vitamin D and other vital vitamins, minerals and antioxidant. This gives you healthy nails and hair. Eggs are also low in saturated fat and can be considered a lean protein and this is a vital component to weight management, when accompanied by fresh vegetable. I think this egg salad with honey lime vinaigrette a very healthy and delicious choice for the one who are trying hard to stay in shape.



Egg salad with honey lime vinaigrette

Ingredients
  • 3 eggs boiled and cut into big chunks
  • 1 cucumber cut into chunks
  • 1 tomatoes cut into chunks
  • 1 onion cut into big flakes
  • 2 tbsp olive oil
  • 1tbsp Lime juice
  • 1/4 tsp honey
  • 1/4 tsp dijon mustard
  • a pinch toasted cumin powder
  • salt and pepper to taste
  • 1 tbsp toasted sesame seed
  • 1tbsp chopped cliantro
Cooking Directions
  1. In a bowl take lime juice, Dijon mustard, honey, toasted cumin, salt, pepper.
  2. Mix well.
  3. Now slowly whisk the mixture and go on adding the oil. Whisk well so that all are mixed well.
  4. Take a bowl and in it take cucumber chunks, tomato chunks , onion flakes ( you can add boiled carrots, beet root and broccoli if you want) then add desired amount of vinaigrette in it. Mix well. Now add egg chunks pour little vinaigrette above it and mix with soft hands.
  5. In a serving plate arrange the salad garnish with toasted sesame and chopped cilantro. Serve immediately.

Hiyayakko/Japanese Cold Tofu


For this recipe I use ingredients according to availability like instead of silken tofu, bonito flakes ( dried fish flakes) and wasabi I use regular tofu, boiled fish flakes and mustard sauce, so this Hiyayakko may not be the actual representative of the traditional recipe but trust me this is super easy recipe, loaded with health benefit and taste superb. Tofu supplies full spectrum of protein, calcium, vitamin and minerals. As all soy product tofu contains isoflavones. Isoflavones helps to reduce the risk of osteoporosis, and also menopausal symptoms such as hot flushes and mood swings. On the other hand fish used in this recipe is low in fat, high in protein and an excellent source of omega 3 fatty acids. Regular intake of fish can reduce the risk of various disease and disorders. Onions contain specific amino acids are called methionine and cystine and, among other things, they are very good at detoxifying your body from heavy metals.In fact, they are able to latch on to mercury, cadmium and lead and escort them out of the body. With all this healthy ingredients toady I prepare this delicious Hiyayakko. This dish needs minimum cooking, you just need to assemble and sit, relax and relish this wonderful healthy appetizer.



Hiyayakko/Japanese Cold Tofu


Ingredients

  • 1 block tofu/ silken tofu
  • 2 tbsp bonito flakes/  boiled fish flakes
  • 1 tbsp soy sauce
  • 3 tbsp slightly fried onion
  • a big drop of wasabi/ mustard sauce
  • 2 tbsp chopped green onion
  • 1/4 tsp grated ginger
  • 2 pinch sugar (optional)
Cooking Directions
  1. Take a big chunk of tofu or silken tofu. Now above it place the boiled fish flakes.
  2. On it place the fried onions. In a bowl mix soy sauce, ginger and sugar if using.
  3. Pour this soy sauce mixture above it. Now sprinkle green onion and pour a big drop of wasabi or mustard sauce. Serve chilled.

Guava Punch


Guava fruit is rich in vitamin A, B and C and minerals like calcium, phosphorus, iron and pectin. The Vitamin C contains of guava function as a good antioxidant. High fiber content in guava is good for improving digestion. It can be taken directly but most nutrient content can be obtained if created as fruit juice or guava juice. Guava juice facilitates digestion and the pectin in this fruit help to lower cholesterol. Guava juice also helps to reduce the heartburn and relieve constipation and thirst. Drinking guava juice everyday routine at night makes the body fresh and healthy. In this guava punch I add few more fruit juices to make it more delicious and healthy. I am sure you will love this yummy Guava punch.



Guava Punch

Ingredients
  • 2 cup Guava juice/nectar
  • 1/2 cup Apple juice
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 2tbsp lemon juice
  • 1tbsp ginger juice
  • 1/2 tsp or to taste black salt
  • 1/4 tsp pepper
  • 1tsp or to taste sugar (optional)
  • a pinch salt
  • 1/2 cup chilled water/ soda
Cooking Directions
  1. Take all the fruit juices, lemon juice, ginger juice, black salt, salt , pepper, sugar if using.
  2. Give some good shake and then add chilled water shake well. Note if you are taking it as your juice diet then use water but if you are serving it to your friends as mocktails then use chilled soda. Serve in your favorite glass and relish a delicious healthy fruit punch. Every fruit juice mix may not suitable for all so if your on juice diet then consult your dietitian to make sure that this fruit juice mix is good for you.

Inside Out Chipotle Chicken Salad

Ingredients
  • 2tbsp Boar's Head Deli Dressing
  • 3 slices Boar's Head 3 Pepper Colby Jack
  • 3 slices Boar's Head Chipotle Chicken
  • 1cup baby arugula , loosely packed
  • 3 toothpicks
Cooking Directions
  1. Lay chicken slices on a clean, flat work surface. Place one piece of cheese on top of each chicken slice.
  2. Toss Arugula lightly with Deli Dressing and place in middle of each piece of cheese.
  3. Starting at one end, tightly roll up chicken and cheese to enclose Arugula. Use toothpick to secure roll; repeat for remaining slices.

Tomato Cilantro Juice


Sharing with you another delicious detox juice. This is tomato cilantro juice. The main organic compound in the tomato is lycopene which have antioxidant properties. It helps in protecting the cells and organs from oxygen damage. It is also a great source of vitamins and minerals. One cup of tomato juice will give you 74 percent of your Vitamin C and 2 percent of Vitamin A in your daily requirement if recommended. These vitamins help the immune system by destroying the free radicals in your blood stream that damage cells. Other vitamins found in tomato juice are K, B1, B2, B3, B5, B6, potassium, magnesium, iron and phosphorous. With this when we add cilantro it gives added taste and flavor. Cilantro is said to remove (chelate) heavy metals. People who have mercury fillings, as an example can find cilantro juice beneficial. As the old saying goes, "an ounce of prevention is worth a pound of cure" so are this juices which help your body to stay fresh and healthy. But all the juices and the juice mixes may not be suitable for all so consult your dietician before taking them.



Tomato Coriander Juice

Ingredients
  • 3 fresh tomato
  • 1 cup fresh cilantro/ coriander leaves
  • 1 tbsp lemon juice
  • 1tsp ginger juice
  • 1/2 tsp or to taste black salt
  • a pinch pepper
Cooking Directions
  1. Put fresh ripe tomatoes, cilantro, mint leaves in your juicer.
  2. Once you get the fresh juice add black salt, pepper, ginger juice, lemon juice. Add little chilled water if needed. Mix well.
  3. Serve chilled juice to yourself in your favorite glass.

Pomegranate Juice


I told you in my earlier post that I am on a detox diet. Few friends of mine ask me to share few recipes which help me to detox so from today  I will share few delicious juices and some recipes which are very useful if you are on detox diet. If you follow a strict  diet 2 to 3 days in a month, it is great to flush out all the toxins in your body. To start the detox diet start with fresh fruit juices but make sure to consult your dietician before going for such diet. Fresh fruit juices have many benefits and among this pomegranate juice is a very popular because it contain very high level of antioxidant than any other fruit juices and green tea.It helps to reduce the risk of heart disease. Antioxidants protect the heart by reducing low-density lipoprotein cholesterol, also known as LDL or the "bad" cholesterol. Pomegranate juice also helps to improve sexual performance and fertility. But it is not good for the one who are suffering from blood sugar level as it contains highly concentrated sugar content. Pomegranate juice also help in weight loss but when you choose make sure the juice contain no added sugar or it will increase the calorie and  not help in weight loss. I try to make  very simple yet tasty pomegranate juice which I am sure you will love to taste.


Pomegranate Juice

Ingredients
  • 1 cup Pomegranate juice
  • 1tbsp lemon juice
  • 1tsp or to taste black salt
  • 1/4 tsp or to taste pepper powder
Cooking Directions
  1. Make a cup fresh pomegranate juice. Then add lemon juice , black salt, pepper powder .
  2. Put them in your shaker you can add little chilled water if you want then shake well so they are well blended. Garnish with lemon wedge and serve chilled.
