Delicious Noodles With Mango, Boiled Egg And Roasted Sesame Seeds


I don’t know why my carving for mangoes reach to its height when the season for this summer food begins to end. Prices too are also going up each and every day and I am going crazy to add mangoes almost anything my head-office could think and suggest me. So last night I cook a pack of noodles in the most easy way possible and added sweet ripe mango generously and paired it with hard boiled eggs and sprinkle some roasted sesame . It was just a casual dish for me but I don’t know if some food fairy arrived and bless this food or not but to my surprise it taste divine. If you have love for mangoes then I will ask that cook this once and I am telling you this easy simple noodles recipe is a keeper.


Ingredients:
Noodles    1 pack
Chicken seasoning cube 1
Dark soya sauce 1 teaspoon
Tomato sauce 1 teaspoon
Vinegar 1 to 2 tea spoon
Vegetable oil 3 to 4 table spoon
Ripe mango 1 cubed
Egg 1 hard boiled cubed
Sesame seed 2 table spoon (dry roasted)
Sugar 1/2 tea spoon
Salt and pepper to taste

Procedure:

First of all dry roast the sesame seed in such a way so that it become crunchy. Add a pinch of seasoning with this and keep aside. Cook the noodle as per package instruction. Heat oil in a pan add the noodles in it then add chicken seasoning, salt, pepper, soya sauce, tomato sauce . Mix well and stir for 2 minutes then add vinegar mix well. Put off the flame. Now in your serving plate first make bed of this cooked noodle then put a layer of cubed ripe mangoes and hardboiled egg then sprinkle generously dry roasted crunchy sesame seeds. Garnish with few fresh cilantro. When you have it take the whole things into your spoon or chopstick what you prefer. The combo of salty and little spice up noodles with sweet mango and boiled eggs is just ummmmmmmmm…. . Give it a try.

Fish Steaks With Garlic Mint Sauce Topped With Dill Cream


Due to some personal reason my Bro was upset last night and what a foodie sister can do other than cook something delicious for dinner and try to bring back his lost mood. My Bro love fish and almost every fish is his favorite if it taste good. So I cooked halibut steak in a special way that can be my Bro’s mood enhancer and taste awesome and yes I can proudly say that I am successful in my mission.
Fish is a high-protein, low-fat food that provides a range of health benefits. White-fleshed fish, in particular, is lower in fat than any other source of animal protein, and oily fish are high in omega-3 fatty acids, or the “good” fats. Since the human body can’t make significant amounts of these essential nutrients, fish are an important part of the diet. Also, fish are low in the “bad” fats commonly found in red meat, called omega-6 fatty acids. You now know that having fish have many health benefits and for fish so large it cannot be filleted properly, such as tuna, large salmon, halibut or sword fish, steaks are the way to go. So for some heartier dish thick meaty steaks are the perfect. Now take a look of the ingredients and how to prepare this delicious fish steak with garlic mint sauce and dill cream topping.

Ingredients:
Fish steak (halibut , seabass, tuna)  2 (6 to 8 ounce piece)
Lemon juice 1teaspoon
Sunflower oil 2 table spoon
Salt and pepper to taste

For Garlic Mint sauce

Ripe red tomato 1 chopped
Garlic 3
Fresh Mint and cilantro handful chopped
Green chilly 1 (optional)
Sugar 1/4 tea spoon
Fish stock 1/2 cup
Salt and pepper to taste
Sunflower oil 2 teaspoon

For Dill cream

Butter 1 teaspoon
All purpose flour 1/2 tea spoon
Milk 1 cup
Chopped dill leaves 1 tea spoon
Salt and white pepper to taste
Cheese 1 teaspoon grated (optional)

For Garnish
Lemon wedge and few sprigs of dill leaves


Procedure:

Marinate the fish with salt and pepper and lemon juice. Use salt and pepper in a very small amount when you marinate because when you have the fish with sauce it will balance. Keep aside for 5 minutes.
Now put all the garlic sauce ingredients in your blender except oil and fish stock then blend in to a fine paste. Heat oil in a pan then add the mint garlic paste and sauté for 1 minute then add the fish stock and let it simmer for another 2 minutes as soon as you see the sauce thicken put off the flame.
Now to prepare the dill cream heat butter in a pan add flour and stir for half a second then add milk salt pepper and chopped dill leaves and cheese if using. Stir continuously and put off the flame as the sauce thickens. You can make both the sauce ahead of time if you'd like. Just one thing you should keep in mind is to put salt and pepper in such way in both the sauces that when you have the whole dish it is well balanced.
In another pan, heat 2 table spoon of oil over high heat and then put the fish pieces and turn the heat down to medium and sauté your fish . Cook this way for 5 to 10minutes or until both side are lightly browned. Don’t let it cook too fast or you will burn the surface. Take your time.
To serve, spread some garlic mint sauce on the plate now place the fish on it, then top the fish with dill cream. Garnish with lemon wedge and fresh sprigs of dill. This is served as a main course and when you have it , first you will get a creamy buttery feeling which will end up with a full on spicy kick. I hope you will love this variation of taste in a single fish dish.

Delicious Dipping Sauce With Tomato And Lime


When monsoon hits and it’s heavily raining, every part of the city is waterlogged and you get an unexpected holiday....... what do you do? This Friday was one such holiday for me and as there is nothing great to do other than watching television and sitting in front of the computer where the internet connection is missing sometimes due to heavy rainfall one fun way to spend the evening is to call few of my neighborhood friend and quickly arrange a snacks party. When friends are around a bowl of Lays works wonder but I want all my friends to have simple snacks but in a special way. So I prepared this delicious quick dipping sauce with tomato and few other simple things but to my surprise this tomato dip just taste magical. Cheese sticks,crackers,cheese balls, grissini, corn chips or potato croquettes are just the right thing to dip into this spicy tomato dip.


Ingredients:
Greek yoghurt      2 table spoon
Tomato puree 2 table spoon
Tomato ketchup 1 Table spoon
Cayenne powder a pinch (optional)
Roasted cumin powder 1/8 teaspoon
Fresh mint and cilantro 1 teaspoon finely chopped
Dried rosemary 1/4 teaspoon
Sugar 1/4 teaspoon (optional)
Olive oil 1 teaspoon
Lime juice 1 teaspoon
Salt and pepper to taste
Procedure:
Mix all the ingredients expect oil, lime juice and rosemary in your blender. Then pour it in a bowl drizzle warm olive oil, lime juice and rosemary and mix well and serve. A very delicious, awesome dipping sauce is ready for your snacks. You can also use this as your bread spread and I am sure you will love it any way. Let me know how you like it. For a change you can also add a little crushed garlic and instead of yogurt you can use cream if you don’t have any problem with calorie count and I am sure it will also taste delectable.

Pasta With Shrimp In Red Sauce


After a hard day work what I need most is a relaxed bath and a dinner that will take just 10 minutes to cook but it may seem like a queen’s treat. Last night when I am feeling like a queen… (ha ha) I open my pasta box and take few shrimps which are enjoying their stay at my refrigerator. They both have to finally come out and pair with each other, to make a delectable love story worth to watch and to taste. Pasta with shrimp in red sauce is something that can pamper your loneliness and you will again fall in love with yourself. Pasta with shrimp in red sauce is a easy healthy and delicious recipe not loaded with too many flavors, the simplicity of this pasta recipe is its beauty. I hope you will like it.

Ingredients:
Pasta Rotelle (or any other)  1 big bowl  
Shrimp 8 to 10 ( peeled, deveined and washed )
Garlic paste 1/2 tea spoon
Tomato puree 1/2 cup
Water 1/2 cup
Dried Basil 1/2 tea spoon
Sugar 1/2 teaspoon (optional)
Salt and pepper to taste
Vegetable oil 2 to 3 table spoon
Cracked black pepper
Grated Parmesan cheese


Procedure:

Cook pasta as per package instruction and keep aside. Now heat oil in a pan put the shrimp and a pinch of salt, fry until prawns are nearly cooked through. Remove prawns from pan and set aside. Add the garlic paste in this oil and stir then add the tomato puree, basil, salt pepper and sugar if using. Cook for 30 second then add water ( you can use fish stock if you want), simmer for a minute then add prawn and simmer for another minutes still the prawn are cooked through and sauce has thickened. Add pasta to pan and stir to combine.

Serve with cracked black pepper and Parmesan cheese.

Shaved Beet Carrot Salad With Dill Vinaigrette


Finally I can proudly say that I am successful in growing little herb in my roof top garden. No it is not that exquisite but it always feel great to use fresh things from your own garden. In my roof top garden in a small pot I grew dill and though they are still very young but I can’t resist to make a delicious summer salad with this young fresh greens. Here is a refreshing salad that is great starter for summer dinner or a single serving. Whether you are entertaining guests or making meal for yourself, you can prepare all the components in advance.The ingredients and the quantities in this recipe can easily be doubled or more for large serving. This shaved salad is my latest carrot adventure. It's also a nice visual without the hard work of cutting the carrots into small sticks or some other complicated shape. So join the fun of this delicious shaved beet carrot salad with dill vinaigrette.

Ingredients:
Orange carrot      1 peeled 
Red Beet 1 peeled
For Dill Vinaigrette
Fresh dill weed 1 table spoon chopped
Lime zest 1/2 tea spoon
Lime juice 1 teaspoon
Mustard sauce 1 teaspoon
Olive oil 1 table spoon
Sugar 1/4th teaspoon
Salt and pepper to taste
For Garnish
few fresh sprigs of dill weed for garnish.


Procedure:
Using a vegetable peeler cut the carrots and beet lengthwise into ribbons or slices.Place the carrot and beet slices in a large bowl. Mix all the vinaigrette ingredients and pour the dressing over the carrots and beets. Toss to combine and serve immediately or serve after giving a hour or two rest in the refrigerator.I am sure this shaved beet carrot salad with dill vinaigrette will bring you some special compliments so give it a try .

Chicken Tomato Rice Pilaf


Last Sunday as you all know was my Happy Birthday and this year we arranged party at our home with some of my close friends and few relatives. My aunt bring a delicious pineapple cake for me and it was just awesome. For lunch there was few fancy Indian foods which my Maa (Mom)prepared like kebabs, prawn korma, mutton curry, mango chutney and black current ice cream( this was store brought). But the show stopper was Chicken Tomato Rice Pilaf, a very delicious colorful rice preparation . This is heart healthy and very good substitute for all those greasy version of pulao and biryani which are loaded with clarified butter and butter.I am sharing chicken tomato rice pilaf recipe with you today and hope you all will like this quick and simple recipe.
Ingredients:
Long grain Basmati rice   3 cups
Chicken breast 300 gram (boneless)cut into cubes
Ginger 1"
Garlic 10 to 12 cloves
Green chilly 5 to 6( you can use more and less to taste)
Cloves 2
Green cardamom 3
Cinnamon 1”
Tomato puree 1/2 cup
Chicken stock 6 cups
Chicken seasoning cube 1
Vegetable oil 1/4 cup (you can use less if you want)
Salt to taste
For Yogurt spread
Plain yogurt 1/2 cup
Salt , pepper, sugar to taste
Roasted cumin powder 2 pinch


Procedure:
First soak the rice in water for half an hour . In your blender take ginger, garlic,cardamom, clove, cinnamon, green chilly (for those who think green chilly is too hot you can try out with black pepper, and let me know how you like it)  and two table spoon of oil and make a smooth paste. Now marinate the chicken pieces with this spice mixture and salt for 30 minutes. Now in a thick bottomed vessel heat remaining oil then add the marinated chicken pieces. Now stir it for 5 minutes then add the tomato puree and 1/2 cup of stock cook for another 10 minutes till the chicken pieces become tender . Now strain the water and add the soaked Basmati rice , add the chicken seasoning to it. Mix well and then stir for another 2 minutes. Add the remaining chicken stock then adjust seasoning, again stir well. Cover and cook until the rice is done on slow flame. Once you put off the flame give five minutes standing time. Then serve hot chicken tomato rice pilaf  with chilled yogurt spread (mix salt sugar and pepper with yogurt and then sprinkle roasted cumin powder above it). Garnish with onion rings and tomato.This hot and spicy chicken tomato rice pilaf goes very well with chilled sweet and sour yogurt spread. A healthy hearty whole meal is ready to savor.

Herbed Pepper Chicken

This weekend is very special for me as I will be celebrating my Happy Birthday on 5th.I am sure a rocking celebration waiting after all this is the day when God choose me to be me and send me to this planet. Whatever be the celebration but first I will offer my gratitude to my God and my Spiritual Master for all their love and blessings , for giving me a loving family … world best parents and caring loving Big Bro and for all my dear friends like you who are from all over the world. A good delicious heartwarming dish to start the celebration with and I hope you will all found it awesome too !
Ingredients:
Chicken  500 gram boneless cut into bite size cubes cooked 
Red bell pepper 1 diced
Yellow bell pepper 1 diced
Green bell pepper 1 diced
Onion 1 big diced
Garlic 6 to 8 chopped
Red chilly flakes 1/2 tea spoon
Tomato ketchup 11/2 tablespoon
Rosemary 1/4 tea spoon
Thyme 1/4 teaspoon
Oregano 1/2 tea spoon
Basil 1/2 teaspoon
Chopped fresh cilantro and mint leaves handful
Sugar a pinch (optional)
Salt and pepper to taste
Olive oil/ vegetable oil 3 table spoon
Lemon juice 1tablespoon

Procedure:
Its true that the list of ingredients is bit long but believe me this dish take hardly ten minutes to prepare. Heat oil in a pan and then add chopped garlic and chili flakes stir and then to it add diced opinion and bell peppers toss and stir for a minute and then add the chicken stir for another five minutes then add tomato ketchup and all the herbs and salt pepper with pinch of sugar if using. Now toss well add the chopped cilantro and mint mix well then add the lemon juice. Put off the flame. Cover the lid of the pan and give 10 minutes standing time so that all the flavors get well blended. Now serve this with your favorite bread. This is a very delicious quick recipe and I hope you will like it.
