Cilantro Fritters With Mint Dip


Last Saturday my Dida ( Granny) visited us and shared a time tested recipe from her kitchen which my Dadu (Grandpa) love the most. My Dadu left us for almost 18 years ago but whenever we ask for some recipes my Dida bring out from her magic box something which my Dadu loved. I am moved to see a magic chemistry that keep them in a deep loving relationship even when one left for an eternal journey.
In today’s world when we are busy accumulating material things for quick satisfaction, when love itself is commercialized do you think that we can save real love and if so share your thoughts. While you are giving this topic your serious thoughts fry some cilantro fritters and dip them in mint dip and I am sure you will have some clear and fresh thoughts. Take a look on the recipe-

Ingredients:
Fresh cilantro   1 bowl chopped
All purpose flour 1/2 cup
Rice flour 1/2 cup
Salt and pepper to taste
Water 1/3 cup
Sunflower/ vegetable oil - to deep fry
Mint Dip
Greek yoghurt / or hung yoghurt – 1/2 cup
Fresh mint leaves hand full chopped
Sugar 1/2 tea spoon (optional)
Salt to taste
Procedure:
In a big bowl take all purpose flour, rice flour, salt, pepper, chopped cilantro mix well. Now add water little by little so that it makes a thick and tight mixture. Heat oil in a pan. When the oil is hot enough scoop out large spoonful of the cilantro mixture and place gently in the pan. Let it cook till each cilantro fritters is brown both side. Carefully remove fritters and place on a paper towel-lined plate to remove excess oil. Now in a bowl mix all ingredients for mint dip and then serve the cilantro fritters hot with mint dip. Relish this crunchy flavorful fritters with fresh mint dip and think that how we can save true love and this world with true love!

Cauliflower Orangey


Today I want to share with you a very delicious recipe which my Mom prepared for us this weekend and I don’t know it is my Mom’s special touch or itself the dish is so tasty, that it spread divine warmth in a chilled winter night .
Ingredients:
Cauliflower    1 medium cut into bite size florets
Bay leaves 1
Cardamom 2 whole
Onion paste 1 heaping spoon
Ginger garlic paste 1 tea spoon
Cayenne powder 1/2 teaspoon
Orange juice 1/2 cup
Orange pulp 3 to 4
Clarified butter/ butter 1 table spoon
Sunflower Oil 1 to 2 table spoon
Salt to taste

Procedure:

First let me tell you how to bring out the pulp from orange to add in this recipe. Hold the orange gently in your palm. Find the edge of a segment, where the pulp meets the membrane, and slice along this so that the pulp is separated from the membrane. Do this on both sides of the segment so you are cutting a long v-shape to completely free the segment from its membrane sheath. Do this carefully to avoid cutting yourself. Continue this process until all you have left is a “skeleton” of the membranes and a bowl full of small, juicy orange crescents. There should be no white parts or membrane on these crescents.
Take a pan put oil in it and then stir fry the cauliflower so they are half cooked. Now put off the flame . Mom cooked this on clarified butter but you can use butter or diet butter according to your access and need because with taste your health is also your first priority , yes taste will differ but such dish are a hit in whatever cooking medium you use.
Now take pan heat clarified butter in it then add crushed cardamom add with bay leaves. Then add the onion paste, ginger paste, garlic paste stir for few second then add the half cooked cauliflower, cayenne powder, salt. Add the orange juice (if the orange juice is tart add 1/4 tea spoon of sugar) little by little while you stir the whole thing. Cover the lid and cook for a minute when the cauliflower is cooked but bit crunchy then add those small juicy orange crescent. Mix with soft hand and your delicious cauliflower orangey is ready. Have it with your favorite bread roll, I have it with naan paratha and trust me the taste is so satisfying and flavorful that you will definitely catch some sweet dreams that night. Delicious Green Veggies With Fresh Dill


Another fresh new year is here… to live , to love and laugh and to work for the best. For all this we need to keep our body fit and mind sound. It is also the time to unload all those calories from our system that we merrily chew down during holidays(ha ha). It’s time to turn to those healthy foods. Fresh green vegetable are like good friends who came to rescue when you feel a slight guilt for all those sinful delights. So last night I cooked some green vegetables with fresh dill leaves and enjoyed a delicious healthy dinner which I would love to share with you.
Ingredients:
Cauliflower or broccoli 1 small cut into bite size florets
Baby potato 8 to 10 boiled
Carrots 1/2 cup julienned
Red yellow and green pepper 1 each julienned
French beans 6 to 8 (top and tail the beans)
Green peas ½ cup
Garlic 3 to 4 cloves crushed
Olive oil 2 table spoon
Lemon zest 1/2 tea spoon
Lemon juice 1 tea spoon
Fresh dill leaves hand full chopped
Salt and pepper to taste
Procedure:
For this plate of mixed vegetable I stir fried the garlic in olive oil till the aroma filled the air then add cauliflower or broccoli ( you can use both) and French beans. Cover the pan with a lid so that this vegetable get a cooked for a minute then add all the other vegetables, salt and pepper then turn and toss till the vegetables are cooked but still crunchy. Then add the boiled potato, lemon juice , lemon zest and the fresh dill leaves and mix well. Adjust seasoning and my delicious stir fried green vegetable is ready to serve. I have it with garlic bread, you can have it with any bread roll of your choice and you feel healthy and complete with this colorful savory plate.
